Conchinita y Pollo Pibil is pork or chicken marinated in Achiote and wrapped in banana leaves, seasoned with predominantly cumin and other spices.
Queso Relleno is a ball of cheese stuffed with ground pork and bathed in a red sauce.
Panuchos are tortillas stuffed with beans and fried in oil, with lettuce, shredded turkey, sliced red tomatoes, red onion and habanero chile sauce served on top.
Papadzules are corn tortillas with an egg filling, and topped with a creamy sauce made from seeds, sour cream, grated cheese, sliced onion and red tomato sauce.
Pavo en Relleno Negro is stuffed turkey marinated and seasoned with a "black” sauce and baked until cooked through.
Poc Chuc is pork loin roast stewed with tomato and green onion. Served with soupy whole black beans.
Pollo en Escabeche is marinated chicken seasoned with chilmole to taste and red onion slices.
Sopa de lima is a turkey broth with strips of fried corn tortilla, seasoned with lime juice and spices.
