Carolo was at the beginning an important "deli" bakery founded in Mexico City since 2007. Today it is a group with 4 restaurants (3 in CDMX and 1 in Monterrey).

A very special young man has been the inspiration of Carolo: Carlos Gómez, an extraordinary baker with Dawn syndrome who has managed to exponentiate his talent to the maximum with this difficult art of well-made bread.
